Scitec Recipes: Easy Protein Breakfasts

If there’s one thing you need to do every morning - it’s eat breakfast.

You need to refuel your body after several hours of sleep. A solid breakfast will kick start your metabolism, giving you a boost of energy to get going.

A breakfast filled with protein is even better. Protein is often overlooked until dinner, and since your body can only use so much at a time, the excess protein is eventually excreted anyway. You need a constant supply of protein throughout the day so your body can perform general maintenance on a cellular level, including repair and strengthen muscle mass.

We’ve created 5 delicious protein packed recipes to add some variety to your breakfasts. Most of these recipes can be made in advance so you can grab them and go in the morning!

Fruit and Nut Protein Flapjacks

Ready in 20 minutes
Makes 9 Flapjacks

Ingredients

  • 300g porridge oats
  • 1 Handful of walnuts
  • 2 heaped tbsp of solid coconut oil
  • 2 tbsp smooth peanut butter
  • 2 ripe bananas
  • 50g dried fruit of your choice
  • 2 scoops Scitec 100% Whey Isolate Protein in Vanilla

Preparation

  1. Melt coconut oil and peanut butter over a gentle heat
  1. In a medium mixing bowl combine all dry ingredients
  1. Once melted together remove from the heat and add to the mashed banana
  1. Add the dry ingredients to the wet mixture being careful not to over stir
  1. Pack the mixture tightly into a lined baking tin approx 1 inch thick
  1. Bake at 180’c for 20 mins or until light golden brown
  1. Allow to cool before cutting into bars

Lemon Cherry Poppyseed Protein Muffins

Ready in 35 minutes
Makes 12 Muffins

Ingredients

  • 125g Casein Complex
  • 125g Self Raising Flour
  • 120g unsalted butter
  • 60g soft dark caster sugar
  • Zest of 2 lemons
  • 30ml Lemon juice
  • 1 large egg
  • 1 tsp vanilla essence
  • 2 tsp baking powder
  • 200g cherries (destoned)
  • 120ml buttermilk
  • 1 tbsp poppy seeds

Preparation

  1. Preheat Oven to 200C and fill 12-muffin tray with muffin liners or grease muffin tin
  1. In a large bowl cream butter, lemon zest, lemon juice sugar until light and fluffy
  1. Add the egg and vanilla, beat until combined
  1. In a separate bowl mix dry ingredients
  1. Add dry mix and buttermilk to the egg batter alternately folding to combine
  1. Fold in Cherries
  1. Divide the batter between the 12 muffin liners and bake for 15-20 mins
  1. Allow to cool and serve whilst still warm

Hazelnut Chocolate Pancakes

Ready in 20 minutes
Makes 10 Mini Pancakes

Ingredients

  • 1 ripe banana mashed
  • 100g spelt flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp maca powder
  • 250ml milk
  • 40g  Scitec 100% Whey Protein Professional in Chocolate Hazelnut
  • 1 tsp ground chia and cinnamon
  • 1 egg
  • 1 tsp coconut oil for cooking

Preparation

  1. Combine all dry ingredients in a medium bowl
  1. Add egg and banana using a whisk (hand or electric)
  1. Gradually add milk, continuously whisking till all lumps are removed from the mixture
  1. You should be left with a mixture with a a nice thick but pourable texture if not add more milk
  1. Cling film and leave to rest in the fridge for 5 mins
  1. Remove from the fridge and give another whisk for good measure
  1. Heat frying pan on the hob at a medium heat (cooking is easier) and add coconut oil
  1. When the oil is hot pour or spoon mixture into pan making pancakes to your desired diameter and cook both sides till browned

Sweet Potato Protein Bread

Ready in 50 minutes
Makes 12 Slices

Ingredients

  • 300g sweet potato (grated coarsely)
  • 4 full scoops Scitec 100% Whey Isolate Protein in Vanilla
  • 2 tsp cinnamon
  • 4 eggs
  • 2 tsp baking powder
  • 1 tbsp honey
  • 50g self raising flour
  • 2 tbsp of milk

Preparation

  1. Preheat oven to 180C and line a 9” square cake tin with greaseproof paper
  1. Mix the protein, baking powder, eggs and grated sweet potato together till a course batter is formed
  1. Add honey and incorporate well
  1. Sift flour and fold into the mixture
  1. Add milk and incorporate well maintaining the texture
  1. Spread batter into the lines cake tin and bake for 30 mins
  1. Allow to cool and either slice or cut into squares
  1. Toast and enjoy with stewed berries

Chocolate Hazelnut Overnight Oats

Ready in 5 hours 10 minutes
Makes 4 Servings

Ingredients

Preparation

  1. Using a medium size tupperware container mix all dry ingredients together
  1. Sprinkle in the blueberries and add the milk
  1. Seal the container and place in the fridge for 5 hours or overnight
  1. Remove from the fridge scoop out preferred portion and serve with frozen fruit and yogurt
  1. Store in the fridge and consume at your pleasure
Pro Tip

We make a large batch of this and leave it in the fridge to snack on during the week or even eat for breakfast its very versatile and great to fuel the body. It also works really well with the other flavours of whey protein, casein complex and can be manipulated for those who are vegan.
